Every year since I was too young to remember, the London Ribfest has been a staple of the August long weekend in London, ON. Thousands of people from London and the surrounding area flock to downtown London’s Victoria Park to enjoy music, entertainment, shopping and of course those world famous ribs.
If you’ve ever been, you’ll know that the row of vendors slinging racks of ribs can be daunting, especially when all you can smell is BBQ sauce. At an earlier age, I used to go with the theory of trying a little bit of everyone. However, after a few years of running out of money before getting through half of the booths, I started taking a more dedicated approach. The first few years, I tried Crazy Canucks and Tony Romas and they were good, I was satisfied. On the third year of my new system, I tried Kentucky Smoke House. Incidentally, that’s when my system ceased or rather morphed from trying a new one every year, to waiting every year for the Kentucky Smoke House to return.
Winner of the people’s choice award 2 years in a row at London’s Ribfest, Tex Robert of Bear Creek, Kentucky, knows what he’s talking about when it comes to cooking ribs. He describes the time and preparation that goes into making a good rack of ribs, ”Four hours is just the amount of time required for smoking the meat”. With the right kind of dry rub and not to mention topping it off with the award winning sauce. He will be in Victoria Park this weekend for the London Ribfest preparing and grilling ribs that are “More tender than your mama’s love”.
So, If you’re in London this weekend, you’ll know where to find me….I’ll be the guy sitting under the tree with a smile from ear to ear and rib sauce in my beard.
